I was curious what you guys do for those days when kids get sick and you’ve been busy all day and forget about dinner, or the days that you are sick and don’t feel like cooking, (or maybe you’re not sick and just don’t want to cook!) Do you have some meals that you keep on hand for those kinds of days that’s quick and easy and that you can make last second?
I would love to hear all ideas too!!! Our go-to meals in cases like that are baked potatoes (Mike could eat those every day I swear) but the toppings depend on what I have around-sour cream, cheese, & bacon bits, or stroganoff, or cheesy broccoli soup, or Mike's fam like creamed corn so sometimes Mike will have that on it. Other ideas are quesadillas with black beans & cheese if I don't have meat ready. During the summer I love to grill chicken and put it on salad when I don't have any other ideas. I'm probably not much help :)
ReplyDeleteI usually have everything on hand for spaghetti or biscuits and gravy. Breakfast for dinner is something we have a lot for a last minute meal. We also like baked potatoes. I have one of those baked potato microwave bags and it cooks the potatoes fast and they taste delish. If all else fails a $5 Hot & Ready will always do the trick!!
ReplyDeleteCould you post the recipe for biscuits and gravy please?! I love your moms but have never learned how to make them! We usually have spaghetti on hand too, and I love having breakfast for dinner, very easy and on hand.

ReplyDeleteWe also do spaghetti in a pinch...seems I usually have everything on hand for that. Also, fried potatoes & scrambled eggs are another emergency meal and it seems like everyone eats them right up and loves them. Tomato soup & grilled cheese sandwiches, quesadillas, or tacos also seem to be common when I haven't planned ahead.
